This is installment one of the Tropical Anabolism Cooking series. An assortment of meals I consumed in my pursuit of physical (and intellectual) specimenry
Ceviche is Simple
Don’t be intimidated. Ceviche is borderline fast food. Its one of my go-to’s when I don’t know what else to make (and want a cold dish). Once you make it a few times it’ll become a staple.
Its really just seafood marinated in acid and mixed with aromatics & vegetables
Marinate seafood in acid
Dice up vegetables
Mix
Eat with chips or spoon
Once you get the basics down, you can venture to other similar dishes:
Poke
Aguachile
Cocktails
The Basic Ceviche Formula
1. Protein
Choose any of the following (you can combine multiple)
Whitefish (Tilapia, Mahi, Mackerel, etc)
Shrimp (raw or cooked)
Scallops
Tuna
Octopus (cooked)
Dice whatever you choose into bite-sized cubes
2. Marinade
You want to “cook” the protein in citrus. The acidity in the juice effectively "cooks" the fish by denaturing its proteins. This improves texture and kills off any pathogens
