After many requests, I present to you the CevicheMaxxington Guide (for Ceviche Summer)
This is installment one of the Tropical Anabolism Cooking series. An assortment of meals I consumed in my pursuit of physical (and intellectual) specimenry
Ceviche is Simple
Don’t be intimidated. Ceviche is borderline fast food. Its one of my go-to’s when I don’t know what else to make (and want a cold dish). Once you make it a few times it’ll become a staple.
Its really just seafood marinated in acid and mixed with aromatics & vegetables
Marinate seafood in acid
Dice up vegetables
Mix
Eat with chips or spoon
Once you get the basics down, you can venture to other similar dishes:
Poke
Aguachile
Cocktails
The Basic Ceviche Formula
1. Protein
Choose any of the following (you can combine multiple)
Whitefish (Tilapia, Mahi, Mackerel, etc)
Shrimp (raw or cooked)
Scallops
Tuna
Octopus (cooked)
Dice whatever you choose into bite-sized cubes
2. Marinade
You want to “cook” the protein in citrus. The acidity in the juice effectively "cooks" the fish by denaturing its proteins. This improves texture and kills off any pathogens
Lime Juice
Lemon Juice
Orange Juice
Pineapple Juice
Grapefruit juice
Use more juice than you think you need. Cover your protein in citrus juice and let marinate for 1-2 hours. Anything longer than 6 hours and the proteins will break down too much.
Bonus: Flavor Enhancers
I like to include some ginger or hot peppers in my marinade. These seep into the protein and add a deeper flavor profile
3. Vegetables & Aromatics
The Classic Ceviche Trinity:
Cucumbers
Tomatoes
Red Onions
Peel and de-seed the cucumbers, try to remove some seeds from the tomatoes. Dice all 3 finely
Bonus Add-ons:
Cilantro
Pineapple
Jalapeños
Corn
After the fish has marinated, combine with the vegetables. Let sit for another 30 minutes & add more citrus if needed
4. Toppings
Spruce it up with some texture additions:
Salt
Avocado
Sesame seeds
Corn nuts (for crunch)
Hoisin sauce (for asian spin)
Eat with Tortilla chips (I make my own with nixtamalized corn, Siete is a good brand), or as is.
You are Now a Certified Ceviche Maxxor
Invite your friends over, make a giant pot of ceviche. Have some nice Mezcal and lots of agua fresca. Its Ceviche Summer
